I’ve had some busy days lately, mostly just going to Dr appts. I had to go the ER the other night I was having chest pain and trouble breathing. They were afraid I had a blood clot in my lungs. After some testing they found out I was ok for now, no blood clot in my lungs. I saw the specialist the other day and they took more blood and she want’s me to see a hemotaligist/oncologist DR. I have an appt with him on Wednesday, we’ll see what he wants to do. The Dr. did tell me to take it easy for a while, I have a hemorrhage around my ankle from my almost car accident last Thursday. They think it caused the 2nd blood clot also. This person in a big truck decided they wanted in my lane!!! I almost hit them from the back-end. If I hadn’t off slammed on the brakes as hard as I did I would have run into them. It would have been their fault, and totaled my car. It wouldn’t have done anything to their pickup, I layed on the horn really hard to let them know what they did!!! GGGRRRR!!! Bad drivers!!!
I have the 2 VA cakes partly done today. I baked them and put them in he freezer, I’ll finish them on Mon. and Tues. Tomorrow we have church then our church group at 6pm. I made banana whoopie pies and a rice/chicken casserole for tomorrow’s group. We never know how many people will be there, there’s always a good variety of food there through. We mostly just eat and talk about what’s going on in our lives, and pray for people, and whoever is here that needs prayer. They are a nice group of people!!!
The VA cakes are both chocolate, I need to stop at the store tomorrow and get a few thing’s I forgot to get the other day. Traffic was crazy and it wasn’t even 5pm or the weekend yet. It seemed like everyone was out and about shopping for the weekend. I took the back roads to Winco, and drove slowly, since my ankle hurts. I probably should have just let Ray do the shopping, but I hate to see him work all day then have to go the store. I’ll talk more later about he VA cakes, I’ll be working on them Mon and Tues. I said that already!!! LOL!!!
Here is a recipe for corn biscuits, that I made awhile ago. My husband loves anything with corn, so I thought I would make up this recipe for him. He loved them, they are really good with butter and honey!!! Enjoy everyone!!!
2, cups all-purpose flour
1, tblsp. sugar
3, tsp. baking powder
1, tsp. salt
1 stick cold unsalted butter, cubed
1, (14.75 oz.) can cream style corn
1/3, cup heavy cream
Heat oven to 450 degrees. In medium bowl, mix the flour, sugar, baking powder, and salt. Cut in butter, until mixture looks like fine crumbs. Stir in creamed corn and heavy cream. Dough will be soft and sticky. Place dough on lightly floured surface. Knead lightly 10 times. Pat into a half-inch circle. Use a 3-inch round cutter and cut out biscuits. Place on ungreased baking sheet and bake for 15-20 minutes until lightly brown on top.
