Coconut Cake and Tuesday Cake delivery.

Hello everyone,

The cake delivery to the nursing home went well Tuesday. I made the coconut cake with coconut frosting. It was really good. I made a 2 layer 9-inch cake. I frosted it with the frosting and toasted some coconut and chopped pecans and coated the sides and a little around the top border. It smelled so good even through the plastic that I wrapped it in. I decorated the top with a pink flower and some dots. I wrote Happy Birthday in yellow icing. They had a couple of school busses there, and kids were inside singing. They sounded really good. I didn’t stay to listen to all of it, had some shopping for St. Patrick’s Day.

Here is the recipe for the cake and frosting:

1 white cake mix ( 18.25oz.) without pudding in the mix

1-1/4 cups coconut milk, not cream of coconut

1/3 cup vegetable oil

3 whole large eggs

1 tsp. coconut extract

Mix all ingredient’s together until smooth and fluffy. Bake at 350 degrees in 2 9-inch cake pans that have been greased and floured.

Coconut Frosting:

4 cups powdered sugar

1 stick butter, softened

1/2 Crisco

1 tsp. coconut extract

1 tsp. butter extract

3-4 tblsp. coconut milk.

Mix all ingredient’s together until smooth. This makes enough to icing to fill and frost the cake plus to decorate on top.

Toasted coconut and chopped pecans for the sides and top rim of the cake.
