Peppermint Patty Cake

Hello everyone,

Here’s a recipe a entered in the fair many years ago, if you can’t eat eggs this chocolate cake is for you!

Cake:

3 cups all-purpose flour

2 cups granulated sugar

1/2 cup baking cocoa

2 tsp. baking soda

1 tsp. salt

2/3 cup vegetable oil

2 tsp. white vinegar

1 tsp. vanilla

2 cups cold water

For frosting and Filling:

4 cups powdered sugar

1/2 baking cocoa

1 stick unsalted butter (4oz.) softened

1/2 cup Crisco

1/2 tsp. peppermint extract

1/4 tsp. popcorn salt

5 tblsp. heavy cream

Mini peppermint patties, for decorating the cake.

Grease and lightly flour 2, 9-inch round cake pans; set aside. Preheat oven to 350 degrees. In a large mixing bowl, mix he flour, granulated sugar, baking cocoa, baking soda, and salt. In a small bowl, mix the oil, vinegar, and vanilla. Vigorously stir oil mixture and water into flour mixture for 1 minute until smooth. Pour into prepared pans. Bake for 30-35 minutes, or until a toothpick comes out clean. Cool 10 minutes in pans; remove from pans to wire rack to cool completely. ***   In a large mixing bowl beat all frosting ingredient’s together until smooth. To assemble the cake, place one cake layer on plate spread 1/4 of frosting on top, place 2nd cake layer on top, frost top and sides of cake. Decorate cake with mini peppermint patties.

For a moister scratch cakes, I cool the cake in the pans for 10 minutes, then wrap in plastic wrap and freeze the cake overnight. To get the cake out of the pan, dip the bottom in very hot water and the cake will come out of pan. Another trick I use is after I have greased and floured the cake pans I place the pans in the refrigerator while I make the cake batter. It keeps the Crisco and flour from melting into the cake batter when you put the cake in the oven.

Ray delivered my cake today to the VA home. I was going to make a TV shaped cake, but changed my mind. The vet liked sports also so I made a small sheet cake and made 3 different balls to place on top. The golf ball and the baseball looked nice, but my basketball didn’t look right. I couldn’t get the black lines straight like they should be. Hopefully next time I can get it right!!! I have 9 cakes for next month, I know wow. They are still looking for bakers to take some more cakes, we have a lot of cakes in May. I don’t have any Angel Cakes next week. My grandparent’s anniversary is next week, I need to make something for them. I’m thinking of baking a few pies. The all get tired of cake, and so do I. Last year I canned some really beautiful cherry and apricot pie filling’s. I think I’ll make one of each and a lemon meringue pie, my grandmother loves lemon!!! Grandpa will eat a piece of all of them, he loves pie!!! lol!!!!

My health is doing ok, my leg is doing a lot better now, it sure did hurt for a while. I see the lung Dr. tomorrow and the specialist on Friday. I hope I can go off the steroids. I have lost some weight which is nice, the steroids made me gain 30 lbs!!!! I hate it!!! I had lost some weight before all this started last year. It has been really frustrating for me to gain this weight back. My face doesn’t look as puffy as it used to and my neck isn’t swelled like it used to be… Hopefully I can get this weight off..
