Opening Day of the Canyon County Fair!

Hello everyone,

Wow what a busy day we had for the first day of the fair!!! My area had a lot of people come through, and commenting on all the entries. A lot of people kept saying that this one cake that we gave 4th place to should have gotten 1st place, and saying the judges didn’t know what they were doing. Well I was one of the judges this year and I know good work on a cake when I see it. This cake was a 3-tier square with white rolled fondant,black scroll work, had a wire kinda topper with jewels, and had some black and red flowers that were rolled fondant and cut with a cookie cutter. The person had put a wide black ribbon border on the bottom of each tier. The cake was a beautiful cake, but she didn’t make all the items on the cake. The more items you make like ribbons, toppers ect.. the higher you will place. We gave 1st to a cake that was the most adorable cake I have ever seen and had the most incredible details on the people and animals. This lady has entered 3 cakes and they all were given 1st place ribbons. We didn’t give them a champion ribbon simply because we decided to go with a senior that had made the best dinner rolls both of us had ever tasted, they were better than mine, and I’m a good baker!!! I have been baking bread since I was 11 years old!!! They were shaped really well and just had the most wonderful buttery taste to them!! I will have to see if she will give me her recipe!!! I would like to make a fair cookbook and get recipes from all the people who have placed 1st, 2nd and 3 place, plus champions I would like to raise money to get a bigger refrigerated display case, I’ll have to talk to my supervisor about it… It sounds like a big project, but I know it would be fun!!!

Well I better go I’m falling asleep at my computer!! LOL!!!

Wow what a great day at the fair!!!

Hello everyone,

Wow what a day it has been for me!! I thought judging was going to start at 8am only to find out later it was going to be 9am, oh well worked out just fine. I had arrived at the fair by 7:30 this morning and had to wait until 8am for someone to open the door so we could get in. It worked out ok, I was able to get all set up and called and chatted with my mom for a bit. Then one of my judges came and we waited about 15 for the other one and no one else was coming!! I guess my supervisor sent out the form for the other judge but she never returned it! Yikes, so I only had one judge, and I was asked (since I didn’t enter anything this year) to help with the judging. I tasted some of the  entries, but not all of them. I ended up with heartburn all afternoon!!! My judge has been judging for more than 20 years and is a fabulous judge!!! We have gotten to know each other through the Master Canning classes, and she is such a nice lady! We breezed through the judging and had a great time! I learned a lot today…

Fair Entries Today!!!

Hello everyone,

Wow did I get some great entries today!!! One lady who couldn’t have been more than 25 years old entered 3 beautiful cakes and she has a very active 3-year-old. Wow I don’t know how she does it. If she started selling cakes she could make a lot of money, she’s very talented!!! The cakes have drawn a lot of attention so far, it will be interesting to see the response during the fair. I don’t know how the judges will decide on the cakes. I also got 2 other great cakes, one a lady had carved a tree trunk with cake and had little animals poking around, it is so cute. It was very well done!! The other cake was a 3-tier cake that was white and black and had big diamonds dangling from the top. Also had a lot of other great entries, cakes, pies, cookies, candy, and breads!! The only contest I am entering is the pie competition. I can enter there cause I don’t know the judges or cut and serve the pies, a wonderful lady has been doing this job for 30 years and she’s 87 this year!!

Well I need to get some shut-eye, my feet are killing me right now!!!

Fair again!

Hello everyone,

Just a quick short post tonight. The fair building looks great, they have a lot of different and very vibrant colors! I didn’t make a display this weekend, I was so sick. My Dr. had me taking iron pills and I slept all weekend, she gave me something different so I hope it will help…

Almost Fair Time!!!

Hello everyone,

Yep it’s almost time for the fair, it’s just 4 days away. I still need to get my display done. I’m hoping to get it done by Sunday night. I just have been dragging myself around feeling slow… I’m not to crazy about the theme this year it’s called Wheeling & Squealing and it has pigs on the cover. You see I’m kinda dreading this year, I have gained weight from the steroids I was on for almost a year, and I am about 20 pounds heavier than I was last year. I did see my counselor about all this, to talk about how I felt. I’m dreading people will make rude comments to me, I have had some in the past. Plus as most of you may know I was teased constantly growing up, from kids in school, from my family,  and from the foster kids we had living with us. Over time it has left me with some pretty deep wounds that I am still trying to heal from.. My husband said I was worrying too much, but then he said he was sorry cause he didn’t have all the teasing like I did growing up… 

I dropped out of 7th grade because of it. Then these 4 girls, whom I’ll refer to as “The Plastics” in school spread a rumor around that I was pregnet and would sleep with any gross boy around… Yeah it was bad.. It was all untrue, my parents did call one of the mothers of the girl who started this and made her say she was sorry, so I did get some kind of apology, but it still affected me. I thought what difference does it make to these 4 girls why I left and why were they so cruel??? A couple of years ago at the fair, I brought a peanut butter and jelly sandwich with me for my lunch. I was eating on half of it and some rude guy yelled OHH eating up all the entries!!! I said no I brought this from home, and he said sure yeah right!!!  I thought how rude some people can be, and what the hell difference does it make to them what I’m eating??? Well I’ll just have to see how it works out this year… I’ll let ya all know later…

Cheesy Drop Biscuits

Hello everyone,

I made these biscuits for our church Life Group last Sunday and they were a huge hit. I even doubled the recipe and made them a little smaller. By the end on the meal they were all gone!!!

Cheesy Drop Biscuits:

2 cups all-purpose flour

2 tsp. baking powder

 1 tsp. sea salt

1/4 tsp. baking soda

1/4 tsp. granulated garlic

1 cup sharp shredded cheddar cheese

1/4 cup freshly grated parmesan cheese

2/3 cup buttermilk

1/3 cup unsalted butter melted, and slightly cool

In a large bowl, combine the first five ingredient’s; Add cheeses. In a small bowl, combine buttermilk and melted butter. Stir into dry ingredient’s just until moistened.  Drop by 1/4 cupfuls 2 inches apart onto a greased baking sheet. Sprinkle with additional parmesan cheese. Bake at 450 degrees for 10-12 minutes, or until golden brown. Serve warm. Refrigerate leftovers. Yield about 1 dozen.

I haven’t been feeling to well the last couple of weeks. I visited my MD today and they want to lower my blood pressure medicine, which is good news!!! I have been having alot of needle like pain everywhere, and she’s not sure yet what it is. They took 4 vials of blood to check different thing’s. I only had to get poked 1 time today!!! Most of the time I get poked at least 2-3 times. My veins like to roll around and hide… Which makes it hard for the tech to get a good vein on me…

I have been thinking about what to make for my display at the fair and finally decided to make what’s on the cover of the fair book. I was going to make something with fondant and more detailed, but decided to nix that idea, and just go with something more simple… Sometimes simple is better!! 🙂 I only have just under 5 days to get it done! YIKES!!! I have a plan through and should be able to get it done by Sunday…

Chocolate Chip Shortbread

Hello everyone,

Here’s a recipe I have had for a long time. I can’t remember where it came from,  I just remember how good they are!

Chocolate Chip Shortbread:

1/2 cup all-purpose flour

3-3/4 tsp. cornstarch

1/4 cup (2oz.) unsalted butter, softened

2 tbsp. plus 2 tsp. sugar

2 pinches salt

1/2 tsp. pure vanilla extract

1/4 cup finely chopped pecans, toasted

3/4 cup mini chocolate chips

Preheat oven to 350 degrees.  Line a 9-inch square pan with foil;set aside. In a bowl sift together the flour, cornstarch, and salt. In a large bowl combine the butter and sugar until light and fluffy. Reduce speed to low, add the flour mixture and continue beating until mixture begins to gather into a rough dough. Fold in chocolate chips and pecans. Pat mixture into prepared pan. Bake for 15-20 minutes just until edges are golden brown.

As I said before I have no cakes this month for Angel Cakes, so I’m just hanging around the house typing in recipe into my computer. When I make a new one I’ll post if here. There are several I need to type in. I keep a collection of recipes in different groups and it helps me get to them faster than trying to look for one in a cookbook. I have a lot of cookbooks and several I haven’t even made anything from them, wich is sad I know.. Later I’ll list all the cookbooks I have, and if you’re looking for a recipe ask me I just might have it!! I have several heritage and new cookbooks.

We didn’t anything for the 4th of July, we have family out-of-town plus others sick and I have been sick. We walked outside to watch the fireworks for a bit, but that was all…

Maple Muffins

Hello everyone,

Here is the Maple Muffin recipe I made at the Ronald McDonald house the other day.

Maple Muffins:

2 cups all-purpose flour

1/2 cup packed light brown sugar

2 tsp. baking powder

1/2 tsp. salt

3/4 cup whole milk

1/2 cup unsalted butter (4oz.) melted

1/2 cup pure maple syrup

1/4 cup sour cream

1 large egg

1/2 tsp. pure vanilla extract


6 tbsp. all-purpose flour

6 tbsp. light brown sugar

4 tbsp. chopped & toasted pecans or walnuts

1 tsp. cinnamon

4 tbsp. cold unsalted butter

In a large bowl, combine the flour, brown sugar, baking powder, and salt. In another bowl, combine milk, butter, syrup, sourcream, egg and vanilla. Stir into dry ingredients just until moistened. Fill greased or paper lined muffins tins 2/3 full. For topping, combine the flour sugar, nuts, and cinnamon, cut in butter until crumbly. Sprinkle over muffins evenly. Bake at 400 degree for 16-20 minutes, or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to cool on wire rack. Makes about 16 standard size muffins.

I found this recipe in a Taste of Home baking magazine, I tweaked it a bit. The recipe was submitted by Elizabeth Talbot, Lexington Kentucky. Chopped up bacon would be good is these the next time I make them, my husband would LOVE that!!!

Not much going on for us this weekend, just hanging around the house… Sunday our church is having a combined service at 10am, then I thought we would stop by my grandparent’s house. My great-aunt is in town that I haven’t seen for a while, it will be nice to see her. Were not having any family dinner or anything. I did invite my niece’s and nephew and their mom and her husband to church, then I thought it would be nice to have a picnic in the park with them. They already had plans, so that didn’t work out… Sorry I guess I’m still feeling blue, so many bad family stuff right now, it’s to hard to know what to do about it. All I can hope for is that someday thing’s will change. I sometimes hope the Lord would just take me away… I know I sound depressing, it’s just that the last few holidays have been crap. We all used to get together for every holiday and birthday, but that hasn’t happened in a while. So many changes…

Ray and I are going to just watch the fireworks tomorrow night that they set off in our town, and we have neighbors that set off a lot of fireworks also… We can watch them from out front patio..
