Peanut Butter Cup Cupcakes

Hello All,

I baked at Ronald McDonald House today and made these cupcakes and some lemon cupcakes. They all turned out great!! It’s from my Taste of Home Baking Book and the recipe is by Heidi Harrington. Great cupcakes Heidi!! 🙂

Peanut Butter Cup Cupcakes:

1/3 cup shortening

1/3 cup creamy peanut butter

1-1/4 cup light brown sugar, packed

2 large eggs

1 tsp. vanilla extract

1-3/4 tsp. baking powder

2 cups all-purpose flour, the recipe called for 1-3/4 cups but I found it really needed the extra 1/4 cup

1 tsp. salt

1 cup whole milk

mini peanut butter cups

In a large mixing bowl, cream the shortening, peanut butter, and sugar until light and fluffy. Add eggs one at a time until, mixed in. Add in vanilla, salt and baking powder. Alternate adding the flour and milk in creamed mixture just until blended together. Fill paper-lined or greased muffin tins half full. Place a peanut butter cup in the center of each cupcake, bake at 350 degrees for 20-22 minutes. Now the recipe said it made 16 cupcakes, but I ended up with 24 instead. I don’t know how they got 16 and I got 24 weird. Anyway try the recipe and see how many you get!!!

Ray is traveling to Twin Falls tomorrow, for his step-mothers funeral. I wanted to go, but I have to pack too much crap and my leg really hurts after being in the car to long. We might have to travel to Seattle to see the lung specialist this month, so I need to rest up for that. We have to stop every hour or so when we travel. I have walk around to keep the circulation going in my legs, it’s a pain in the ass!! I also have to wear special stocking’s all the time.. Lesson learned take care of your legs!!!! It’s really crappy to be disabled like this!!! I hate it!!! 

I love going to the Y’s water river class. I couldn’t go today because I needed to bake. I will be going in the morning. They have the class 6 days a week and that is really nice!! If I don’t make it one day I know I can go the next day. I have to go at least 3 times a week. It’s 45 minute class, but it doesn’t seem that long, the time flies by!! I wish it was a little longer!!!

Well I better go for now, need to help Ray get some thing’s done..
