Soft Oatmeal Rolls

Hello Everyone,

I love oatmeal! I used to hate when I was a kid, it tasted odd to me growing up. Over the years through I grew to love it! I love these rolls, they are slightly sweet and so soft!! Enjoy!

Soft Oatmeal Rolls:

2/3 cup quick-cooking oats

1/2 granulated sugar

1/4 cup unsalted butter, softened

1/2 tsp. salt

3/4 cup boiling water

1 package (1/4oz.) active dry yeast

1/2 cup warm water, ( 110- 115 degrees)

1 large egg, beaten

3-1/2 to 4 cups all-purpose flour

In a mixing bowl, combine, oats,sugar, butter and salt. Stir in boiling water; cool to 110-115 degrees. Dissolve yeast in warm water. Stir into oat mixture, with egg and enough flour to form a soft dough. Turn onto a floured surface and knead until smooth and elastic, about 5 minutes. Cover and let rest to 10 minutes. Roll to 1/2-inch thickness. Cut with a floured 2-1/2 inch biscuit cutter, repeat with remaining dough. Place 2-inches apart on a greased baking sheets. Cover and let raise in a warm place until doubled, about 1 hour. Bake at 375 degrees for 15-20 minutes or until golden brown. Remove from pans to wire racks. Serve warm. Make about 1-1/2 dozen. You can also roll the dough into 2-inch balls…
