June Food Network Magazine Recipe Reviews

Hello Everyone,

Here are some of the recipes we tried in June. First on is on page 62 and 63, the “He Made She Made”  flavored tea contest, between Bobby Flay and Aarti Sequeira. We loved Aarti’s tea better than Bobby’s. In Bobby’s you could not taste the blackberries at all. In Aarti’s tea the flavor was just right and we loved it!!! Sorry Bobby maybe next time!! 🙂

Next recipe is on page 66 the Copy That recipe. It’s the Almost-Famous Corn Salsa, this was just ok to us, not that good. I ended up using the rest of the corn salsa in a Mexican casserole and it tasted really good in that..

The next recipe is on page 69 Ashley’s Banana Cream Pie, neither of us liked this one either. I guess it’s because I don’t like banana’s too much. Ray said it was ok, not the best..

The next recipe’s are page 95, I made both the Peanut-Butter Chocolate Chip-Bacon Cookies, and these were really good!  I made the Beer Lover’s Sundae sauce and it tastes fine if you like beer. I’m not a drinker so most of this will go to Ray if he wants it…

The next recipe is on page 100, the Fish Tacos with Fresh Salsa, and I loved these, but I love fish tacos! When we go out to a restaurant I look to see if they have them on the menu, and I get them most of the time. I changed the fish in this recipe, since I don’t trust getting catfish from the store, a lot of them have that muddy taste, yuck… My mom and step-dad are the only one’s I know, that know how to clean catfish the right way. I used tilapia instead, and it worked out great!

The next recipe are on page 131 and I made all 3 recipes. This was my first time making spring rolls and Ray loved them! He’s been asking me to make some more of them since I have some rice paper wrappers left over, I just need to find another filling. I didn’t wrap the pork in lettuce, I just marinated it and grilled it. Then place it on top of a salad and it tasted great! We both didn’t care for the bubble tea, it just tasted weird to me. I won’t buy black tapioca again, to weird for me, I guess..

The next recipe is on page 154, the Salmon burger, we both liked this one!

Next one is on page 155 the Pork burgers and these were really good, I made my own coleslaw for these.. 

The next one is on page 156, The Veggie Burger and we both loved this one!

The last recipe is on page 170 and I can’t make this one until Saturday or Sunday. We’ll be getting some fresh peaches Saturday in our Bountiful Baskets, and I am really looking forward to making Ina’s Fresh Peach Cake!  I also have to make a peach cobbler, Ray has been begging me to make one! 🙂 With the rest of the peaches I am canning jam, and peaches for the fair. I’m going to have a busy week!!!

I don’t have any Community Cakes this month. I felt I needed a break plus I have to get stuff ready for the fair. All I am entering is some canned foods and some dried foods. I will have about 20 entires in the canning department. My husband teased me and said “wow an all time low, are you sick! I told him hahaha you’re so funny!!! I hope sarcasm comes across here???

May Food Network Magazine Recipe Reviews

Hello Everyone,

I’m sorry for posting this so late, I have had to many others thing’s I wanted to post about and before I knew it time flew out of my hands!! lol!!

The first recipe we tried is on page 48, the “Maple-Pecan Scones”. I didn’t like these at all. The orange zest overpowers all the other flavors, this recipe needs some work… Next recipe is on page 71, the “French Fry Deluxe Salad. The recipe calls for frozen pre-made french fries, but I didn’t want to buy them. I wanted to make my own. I have a curly french fry maker, and it turned out great! the next recipe is on page, 74 the “Escarole Salad With Anchovy Dressing, and I loved this one! The only change I made was the lettuce, I used romaine instead. I couldn’t find any escarole. The next recipe is on page 78 and 79 its the “He made She Made” contest. Adam Gertlers “Kids Candy Store Cookies” and  Sunny Anderson’s “Nutty White Chocolate Oatmeal and Peach Cookies”. I baked these for Ronald McDonald house, I like Sunny’s better, I guess it’s because I love white chocolate and any cookie made with oatmeal! I had a hard time finding the pretzel m and m’s for Adam’s cookies and they were expensive! I had to substitute dried apricots for the peaches in Sunny’s recipe, I couldn’t find dried peaches at all. What a bummer that was.. Oh well maybe next time!! 🙂 The next recipe is on page 80 the “Almost Famous Cheesecake Pancakes” and these were so yummy! I will be making these again!!! The next recipe is on page 82, Aarti Sequeira’s “Shrikhand and Pooris” I didn’t bother to follow the first step in putting the yogurt in cheesecloth and leaving it overnight. The Greek yogurt I buy is so thick already I felt I didn’t need that extra step. I did buy the saffron, I had a coupon for World Market and bought it along with a few other things I wanted to try. The Shrikhand is really good, I ate it by itself and with granola, it’s very good! The Pooris on the other hand was heavy lead balls of dough, ick…. I think my flour was to heavy for the recipe. I am going to try it again since it’s really easy to make. I am going to add half white flour and half sifted whole wheat flour and a little sugar, and see if that lightens them up a bit.. The next recipe is on page 104 the “Tilapia Marsala with Rice”, this was ok, not stellar… The next recipe is on page 147 the “Chilies Rellenos”, I loved these, I don’t think Ray liked them as much as I did. It’s a really easy recipe to make, but it does have a lot of steps. The last recipe is on page 164 and I think there is a typo in this recipe. It calles for a 8-inch square baking pan, but it was way to full for brownies. I had to bake it longer than the recipe said and ended up with hard dry edges and s gooey center. I have other brownie recipe that are so much better than this one. Next time I make my own tried and true brownie recipe and add the toppings to it instead..

April Food Network Magazine Reviews

Hello Everyone,

Here are few recipes we tried from the April issue. Give some of them a try yourself!!! 🙂

I’ll start in page 48-49, I made the “He Made She Made” chicken salads. The frist one is from Emeril, and both Ray and I didn’t like this one. If I ever do make it again, I would add a green onion, the red onion in this was to hot. If you do make it let it sit overnight, so the flavors mellow out a bit.. The next one is Aarti’s and we both really liked hers a lot better! So sorry Emeril you lost on this one! Aarti’s had a great flavor and crunch from the grapes to the cashews, delish Aarti! So far every recipe I have tried of her’s has been wonderful!! Thank you Aarti for another great recipe!

The next recipe is on page 52, the Almost Famous Rosemary  Bread. All I can say is YUMM!!! Excellent bread recipe, and great for dipping in peppery olive oil!

The next recipe is on page 74 the Chicken and Asparagus Crepes. I really liked this one, Ray didn’t care for it too much. I made my own crepes, I didn’t buy them, since they are easy to make. Several years ago I worked with a home health client that loved crepes. She is the one that taught me how to make them. She liked them with cottage cheese, strawberry jam, and sour cream. I made them like that once and they are tasty. These chicken ones are warm and had great flavor. 

The next recipe is on page 82 the Glazed Salmon with Spiced Carrots. We both really like the salmon cooked this way. I didn’t like the carrots made this way, maybe it was the mustard in it. Ray said he didn’t mind them. I won’t cook carrots like that again, just the salmon.

The last recipe is on page 150, the Monster Marshmallow Cookies. I had some trouble with this recipe, I think it needed  about 1/2 cup more flour, and do not skip the step on lining your cookie sheets with parchment paper, or they will stick! Whatever cookie part that wasn’t on parchment paper stuck to the cookie sheet. I think they would be better to if you freeze the marshmallows and roll the cookie dough around them. They just melted onto the cookie sheet. They did have great flavor, they were like a candy cookie, with lots of crunch from the rice cereal, and nuts. I didn’t add the chocolate drizzle, just didn’t want too…

Well that’s all for today everyone, I have 200 cupcakes to get done for my aunt. She asked me to make them for a Mother’s Day event they are having at her church this week. So I need to get very busy!!

March Food Network Magazine Recipe Reviews

Hello Everyone,

Here are some of the recipes we decided to try… The first one is on page 57 “The He made She made”. I didn’t make Cheffs Robert’s version of antipatso platter, there was nothing to it other than putting meats, cheese’s, bread, and vegetables on a nice serving platter. It’s a lot easier to make his, than Cheff Ann’s was. I did make that one and we loved it. It’s a very creative way to make a antipatso salad. This one goes to Cheff Ann, sorry Cheff Robert, we still love your shows!!

 The next recipe is on page 74 the Eggs in Purgatory with Salami, we loved this one. So very easy and a great quick dinner without thawing out and cooking meat. I have made this for breakfast, lunch, and dinner!!

The next recipe is on page 79, the Pork Marsala with Spinach, oh so very tasty!! Ray loved the mushroom sauce, and well he loves pork so anything I make with pork, (as long as it’s not spicy) he will love it!!

The next recipe in on page 79 as well. The Shrimp Fra Diavolo (which means Brother Devil) I know it’s an odd name for a shrimp dish. It was very spicy, it had 1 tbsp. of red-hot pepper flakes. Ray said it was to hot for him, but it wasn’t for me. I’m the chili head, he’s not!! LOL!! 🙂

 The next recipe in on page 117 Ricotta-Filled Meatballs with Fennel and Chili, we both loved this one as well. I haven’t made meatballs like this before, they called for ground beef, veal, and pork, I normally make turkey meatballs. The meatballs very good and I made my own mariana sauce to go with it.  It was a lot more work than other meatball recipes I have made, but it’s a keeper!!

 The next recipe is on page 130, the Tiramisu. I loved this!! This is the only dessert that I love coffee in. It’s a lot better if you let it sit overnight, the flavors get a chance to blend together better. I didn’t use mascarpone cheese. I used some soft set cream cheese instead, it needed to be used up.. 

Well that’s it, and I think that was enough anyway!!

Today is my dad’s 59th Birthday, I can’t believe it. He doesn’t look his age, he looks younger than that. Ray and I are taking him and my step-mom out for his Birthday tonight. We are going to Olive Garden, one of our favorite places to go. I am really going to miss them when they leave next week, still having a hard time with it… It’s also my aunts Birthday. My mom and grandma are having a party for her tonight, and they wanted us to come, but we had already made plans with my dad.  We’ll need to do something later with my aunt..

I went to the first class last night for people who have had cancer, and got a lot of great information. We’ll be meeting one day a week until the end of this month and a couple more times after that. It was really nice, they are having different speakers coming each week to talk about thing’s that cancer people need help with. I was the only one that had thyroid cancer there. All the other’s had some form of breast cancer, there was one man who had some kind of cancer, but I can’t remember what he had.. They showed us some exercises we could do to build up the muscles in different area’s. I couldn’t march in place, it’s very painful on my right foot. It keeps going numb when I do too much on it..

Well I better go  for now, need to get some thing’s done…

Food Network Magazine Recipe Reviews

Hello everyone,

Here are some of the recipes Ray and I tried from the January/February issue of the magazine. The first 2 are on pages 50 and 51. Pat and Gina Neely’s pancake and syrup recipes. Now I don’t like the Neely’s show on FN at all, I have tried so watch it about 3-4 times and oh gag me!!!. These are the first recipes I thought I would try from them. I made Gina’s pancakes first and they were really good, the syrup recipe was fantastic! Ray really liked these pancakes! Pats pancakes were ok, not my favorite. I love the blueberries with the syrup, very tasty!! So, I still won’t watch their show, but I might try more of their recipes later…

 Next one is on page 55 Miriam Garron’s Turkey Sliders, I loved these, anything with ground turkey and hummus is a winner for me, Ray didn’t care for them..

The next one is on page 70 FN kitchens Pork with Apples and Garlic Mashed Potatoes. Ray really liked this one, he’s a huge pork and anything bacon fan!! LOL!! I didn’t care for it too much, and I don’t know why..

The next one is on page 72, the Spaghetti and Turkey Meatballs. I LOVED this recipe!! The meatballs very tender and light, and the whole spaghetti was very tasty. I have had whole wheat pasta before, I have been trying to cut down all the white refined foods in our house. I love whole wheat, I always have, and I love brown rice too. It takes a long time to cook, but’s it’s so worth it!! The sauce recipe was very good, I didn’t have the parmesan rind to add to it, so we just added some parmesan cheese to our dishes instead.. This is a must make again recipe for me!!

The next one is on page 73 the Slow-Cooker Split Pea Soup. I made this for my February’s U of I food safety class and they all loved it. I grew up eating a lot of soup like this. They are very filling and cheap to make. My mom made a lot of split pea, lentil, and barley soups when I was a kid. So, thank you mom for making these all the time, I now love to make and eat them!!! 🙂

The next recipe is on page 103 Ellie’s Raisin Bread. Now I took some creative liberty with this. I added dried sweetened cranberries instead and made them into cinnamon rolls instead of just a loaf of bread. I loved this whole wheat bread recipe, it’s very tender and nutty tasting!! I will be entering this bread in the state fair this year!! 

That’s all the recipes I felt like making this time, I am on my way to the kitchen now to make Guy’s whole wheat preztals and the filled chocolate mousse cakes. I’ll let you know later how they turned out!! I have already made a couple of recipes from the March issue, but those will be in a later post.. 

I haven’t taken to many cakes this month… I need a break I guess.. I did take one to a nursing home this past Sunday, it wasn’t to fancy. I will be baking the Mission cake this month plus one for a mentally challenged adult, so that’s 3 cakes.  The Dr. is changing my medication for the Sarcoid plus my nerve pain and I haven’t had much energy for anything. I am still going the Y’s Swim Fit class, I love it!! It’s the only place I don’t feel any pain and feel as light as a feather, floating in water..

Well I better go for now and head into the kitchen for more recipe testing!!

December Food Network Magazine Recipe Reviews

Hello everyone,

I made several recipes from the December issue, not as many as I wanted to. There are several others I would like to try later. When I make them I will mention them in later posts. There were a lot of dessert recipes and it would have been SUGAR-OVERLOAD if I had made them all!! Some would be great to enter in the State fair later, but I will try them before entering any of them..

So here goes… First one is one page, 60 Ellie Kriger’s Minstrone soup. I really like her recipes, they are tasty and don’t have all the fake junk, like sugar substitutes, ect.. This soup is wonderful, light and refreshing!!! Next on page 96-97, I only made Duff’s potato pancake and it’s ok, nothing to special about it, just potatoes… I am going to make Nigella’s recipe later this week, so I’ll write about that one later.. Next one on page 101 Charlie’s Cranberry-Eggnog Muffins, and these were ok, I think there’s some typo in this recipe, because it made almost 18 standard size muffins, and the recipe says it only makes 12, what up with that??? There was way too much topping for the muffins also, I didn’t like the texture of it. These are better served warm the same day as they don’t taste good cold.. It’s a heavy dense muffin, not what I am used to, I guess. As far as flavor wise goes they do taste ok..Next on pages 177-183, I made the first 3 pages of these cookies and had to stop. These were the cookies I made for Christmas day and was going to give them out on plates to my family, and well from my other posts you know what happened on that day.. I put a lot of work, money and time into making all these cookies only to have them thrown back at me, I am heartbroken by how we were treated that day. I still have a had time even talking about it without crying… As far as the cookies go all 9 recipes I made were very good, I still have most of them in my freezer. We did eat all of the meringue cookies, they are my favorite cookies right now! I baked the Golden Sesame Rolls the other day and they are really good to and so easy!!! When I make the last 3 cookie recipes I post more about them later.. Like I said before a lot of sugar is this issue, too much!!! Well that’s all I made so far…

My Dr. sent the letter we needed to the Y , so hopefully we will be able to start going next week. I am looking forward to going, even through it will be hard at first..

The cake for the NICU baby has been put off until Friday, I guess he isn’t doing as well as they had hoped.. I do have a cake to deliver to the mentally challenged place on Friday also. The lady I talked to on the phone said that the girl I am baking the cake for a girly-girly, so anything pink, yellow or with flowers would be great! I thought about making her a purse cake. I haven’t made one before. Wilton has a really cute purse cake pan, it would be fun to try that one!!

Well I better go for now, I have a lot to get done today!!! 4 cakes, 2 pies, and cleaning to work on the rest of this week. I forgot to say that the 4th cake will be for my husband’s aunt, she will be 88, I think? You would never know she was that age, she still drives, cleans her house and cooks for her kids and family a lot. She’s an amazing lady!! We lover her a lot!!! She deserve’s a special cake!! 🙂

Food Network Magazine Recipe Reviews

Hello Everyone,

Here are the recipes we tried out this month’s November Magazine. What I decided to do was cook a feast for our Thanksgiving day. Ray and I stayed home this year. After my grandmother’s passing I just didn’t feel like going anywhere that day. We started our day with pumpkin pancakes, now these were not from the magazine. I made them up!! I measured about 2 cups of krusteaz pancake mix. I know what  your all saying what a mix??? What’s wrong with you Amanda??? I grew up on this pancake mix and happen to really like it!! I then added about 1-1/2 cups pumpkin puree, dash of cinnamon, and some half-half to thin out the batter a bit, about 1/2 cup. You’ll have to play with it a bit to get the right consistency you like. They were very tasty!!! I cooked some sausage and that was breakfast!! I watched the whole Macy’s Thanksgiving Day parade! I never get to when I cook for all my family here. My grandparent’s always want dinner by 1:30 pm or so. It was so nice to just sit until the parade was done. I didn’t even get the turkey in the oven until 12:30 pm!!! Speaking of turkey, I made Alton Brown’s turkey recipe on page 118, I then made Tyler Florence’s Buttered Turnip Puree, and they were delish!! On page 139 I made Alex’s Guarnaschelli’s Parker House rolls, and I didn’t make them into the same shape she made them in, I just made dinner rolls out of them. We are still eating them a week later!! On page 50 I made Ellie Krieger’s Sweet Potato Cassarole,  I wanted to make something different from the traditional cloying sweet potato casserole with marshmallow’s. This recipe was so much better!! I will make this one again!! I decided to make the “He-Made She Made” contest with cranberry sauce on page 58 and 59. I am the only one that tried these to dishes out, Ray doesn’t really like cranberries. I have to give this one to Guy, I loved his cranberry sauce. There  is something about Paula’s cranberry/cream cheese mixture that I didn’t like at all.. Ended up throwing the rest of her’s out in the trash, sorry Paula, better luck next time!!! On page 128 I decided to make Cat Cora’s cornbread to make dressing with. I made the best cornbread stuffing I have ever made with this recipe!! Don’t ask me how I made it, I can’t remember how to!! I just threw stuff in it!! LOL!! The last thing I made was on page 149, the Almond Pumpkin pie. This was a very tasty pie! I loved the creamy filling, plus the fact it had amaretto in it really helped!! I didn’t care for the crust too much, I’ll stick with Julia Childs pie crust recipe from now on for all my pies!! The rest of the day went really well for us, just hanging around the house watching movies and drinking a bottle of really good red wine helped a lot!! LOL! It was a nice peaceful day for us..

I delivered my hospice cake this morning, right on time I will mention. I walked into the door of this place and the person that takes the cakes was on the phone at his desk and just put out his hand for the cake and didn’t say one word to me. Not a how ya doing, nice cake, NOTHING!!! I know he may have been busy on the phone, but this guy is always like this, RUDE!! I do not like him at all. I just hope the Birthday person likes the cake, that matter more to me anyways…

For the last 3 days I have been working on the sweet 16 cupcakes for a coworker’s daughter at work. I have been molding dozens of chocolate crowns, the numbers 16, and made some fondant bow ties. The party is a mocktail/cocktail party. Her colors are black, silver, and pink. I am using silver baking cups, hot pink champagne buttercream, chocolate crowns, the number 16, and sprinkle some hot pink coarse sugar on the buttercream. I am brushing the crows with gold and silver luster dust. I hope they like these cupcakes!! I am only asking  for what it has cost me for the ingredient’s and asked if she wanted to make a donation to Angel Cakes in whatever amount she felt like. I don’t have a licence kitchen so I can’t make money off of what I make. Hopefully someday I will have one! Sighhh someday who knows…

Well goonight all, I have 50 cupcakes to bake and decorate tomorrow!! Very busy day for me!!!

October Food Network Magazine Recipe Reviews

Hello Everyone,

We tried several of the recipes in the October issue. Some I wanted to try, but just didn’t feel like cooking too much this month.. So here goes.. First one was Aarti’s Bombay Sloppy Joes on page 68. This is a really good recipe, different but good. I have never added nuts and raisins in sloppy joes before. My husband really liked this one. I didn’t add the honey, the raisins made it taste sweet enough for us. The next recipe is on page 102 the Sausage-Califlower Spaghetti. I wasn’t to sure about this one at first. I don’t like cauliflower too much. I don’t know, why it’s just a taste and texture thing I guess. With the way the recipe is made I really liked the cauliflower made this way! My husband even said honey this is really good! Normally I’m always asking before he even gets 2 bites of anything to see if he likes something or not. I didn’t even have to ask this time!! LOL!! The next recipe is on page 121, the Grilled Korean-Style Skirt Steak. Loved this recipe as well! I didn’t make the Kimchi Fried Rice, just made some Kimchi and regular fried rice. I ate the kimchi and Ray ate the fried rice. It’s the first time I have ever made kimchi and OH MY WORD is it ever HOT! I had to mix mine with some cooked brown rice to tame down the heat. I had a friend on FB say that’s not the traditional way to make kimchi, FN added some seaweed to the fried rice version. I know Ray wouldn’t eat it if I made it that way. He took one bite of the kimchi and handed it back to me and said you can eat, to hot for me!! I need to find a kimchi recipe and see how it’s made to compare with this one.  The last recipe I made is on page 142 the Caramel Apple Cake. I read a thread that some people of FN FB site had some trouble with the sauce, but it came out great for me. I even didn’t have the heavy cream it called for, I ended up adding 3/4 cup of half-and-half. Next time I make this one I will peel and slice the apples smaller and add more cinnamon, I think it would look better and taste better that way. I did have to buy the pan to make it. I didn’t have a 9×3-inch cake pan. You would think with all the cake pans I have that I would have one! Well that’s all the recipes I tried from this months magazine. I was going to try the He made She made contest, it was nachos, but didn’t have the energy to try anymore this month. I have had to many other thing’s on mind I guess..

I have been sick the past 2 days, I have the flu.. I didn’t make the cakes I didn’t want to pass on what I have to someone else. I was going to bake for Ronald McDonald House tomorrow, but I had to tell them I couldn’t make it. They have so many people there with sick kids that I didn’t want to pass on whatever I had to them, that wouldn’t be good at all.. I did have the ultrasound yesterday and I still have the cyst on my ovary. I don’t know yet if I will need surgery, I hope the  Dr. calls me tomorrow. If she doesn’t by 1pm I am going to be calling. I really don’t want to wait all weekend. I have been really stressed out about this.. My husband and I had a fight over some of this tonight and all I will say is that the fight didn’t help… Not sure if we really resolved anything about it. It wasn’t too much about the test as about other thing’s going on…

Food Network Magazine Recipe Reviews

I made several recipes in the last issue of the magazine and so many were so good!!! First 2 recipes I made are on pages 66 and 67 the Face off. I really liked the toppings on Sandra’s pizza better than Aaron’s, Ray like Aaron’s better. I will not buy pizza in a tube again through I just do not like the flavor, I’ll make my own next time!! Next on page 84 I made both the Spicy Lentil soup and the Pitts pizza’s, both were very good. The soup does get thicker the next day and tasted better to me. Ray didn’t like the salad topping on the pizza, but I did. Sometimes he can be a picky eater.. Next one I made is on page 92 the Pork with Plum Sauce, we loved them!!! I commented on Food Networks link on Facebook when they posted this recipe couple of weeks ago, saying that it was fantastic! Other people commented that it looked nasty! For the life of me I don’t understand why people comment about something when they haven’t even tried something yet. Some of the comments were downright rude and nasty. That is one Facebook page that has some of the most immature people I have ever met. I have met some very nice people there too, so I can’t complain too much about it… The next one is on page 94 the Chile Relleno Burgers, I am the only one that tried that one, Ray doesn’t like chilis very much and I knew he wouldn’t try this one. I thought oh well more chili’s for me!!! The next one is on page 109 and the Gnocchi with Wild Mushroom Ragu, oh my goodness, it was fabulous!!! I didn’t make the plum tart I made a plum pie instead. The mushrooms were a little expensive, and took some time making, but so worth it!! Here is a picture of it..  I do have to practice making the Gnocchi, mine were a little weird looking!! The last one I made was on page 162 the Mini Banana Fritters, I ate several hot right out of the cinnamon sugar mixture.. Note of advice through, I added all-purpose flour instead of cake flour, I know it’s my fault I just didn’t want to dig out my cake flour. I didn’t add enough flour and my batter was a little runny so the fritters were flat, not the round ones like on the page. Next time I’ll add more flour or use my cake flour so they look like the one’s in the picture. I’ll make these again, since I always have banana’s on hand!!! It’s nice to have a different recipe for banana’s since Ray always bring’s home old banana’s from work. They end up in the freezer and I try to find something different to make with them, instead off banana bread, cake, or cookies.. That gets old after a while!!

Memorial Weekend & Food Network Magazine

Hello Everyone,

It’s been quite a weekend for me. A lot going on and some huge family problems, but I won’t post too much about it here. All I will say is that some family connections have been permanently severed and it’s has made me a little sad and a little relived. I feel like a huge weight has been taken off my shoulders. Ray had 4 days off for Memorial weekend, and on Friday I baked at the Ronald McDonald house. I love going there, the people are so nice and they always have everything there I need to bake! I baked peanut butter cookies, I’ll post the recipe below. After baking we went to the zoo and it was really nice to go just by ourselves, although there were 4 school busses of kids there, thank goodness I didn’t have to keep track of them! lol!!! It was great to spend the time and read what the animals eat and where they come from. It’s been years since we have been there, it was a nice day. Saturday we finally went to see Alice in Wonderland in 3-D, it was great! Then we did some shopping. Sunday we finally made it to church and afterwords our life group and one other group was having a picnic in the park. Ray and I played boccee ball, it was my first time and we had a lot of fun. Ray and his team-mate won the game. Monday we just stayed home, I know boring!!!

I haven’t tried to many recipes from the May issue of the Food Network magazine, I am going through withdrawal on the steroids and I have no desire to eat.  There were only a few we tried. The first one is on page 74 the Meaty Quesadillas, Ray really like these but I didn’t. The next recipe is on page 77 the Poppy Seed-Chicken Pitas, this recipe was really good. I ended up buying a roasted chicken and using dried cranberries and I forgot the poppy seeds!! Ack!!! Other than that the dressing on the chicken was really good. The next recipe is on page 79 the Curried Salmon Cakes. I used canned salmon instead of fresh, to expensive for the fresh kind. I forgot the mango salad, uhhh I guess  I have been tired… The last recipe I tried is on page 146 the Jalapeno-Cormeal Pancakes, my husband was gone out-of-town and wouldn’t have eaten them so I ate them by myself. I had to use yellow cornmeal, I couldn’t find blue cornmeal. The problem I had was the batter was way to thin and my first 2 pancakes didn’t look like the ones in the picture at all. I ended up adding another 1/2 cup flour to the batter and that helped. They still didn’t look like the one’s in the picture, but the were not paper-thin like the first 2. Maybe the blue cornmeal had something to do with thickening of the batter better than the yellow cornmeal, I don’t know… Don’t think I’ll be making these again, they didn’t sit to well on my stomach anyway.

I have 3 cakes this week. The first one is for a baby leaving the NICU after being there for 3 or 4 months! Wow, must have been a really sick baby for a while..  I don’t know yet if it’s a boy or girl. I am going to use the Wilton baby pan that is really cute! I have 2 cakes to deliver Saturday, one to a nursing home and the other to the VA, I haven’t decided what to make for them yet.

Heres the Peanut Butter cookie recipe:

2/3 cup peanut butter

2/3 cup unsalted butter

1 cup granulated sugar

1 cup packed light brown sugar

2 large eggs

2 tsp. vanilla

3 cups all-purpose flour

1 tsp. baking soda

1 tsp. salt

12 oz. peanut butter chips

Heat oven to 375 degrees. Mix peanut butter, butter, sugars, eggs, and vanilla. Stir in remaining ingredient’s. Drop dough by rounded teaspoonfuls 2-inches apart on ungreased baking sheets. Bake 10-13 minutes until lightly browned. As you can tell this is similar to the chocolate chip cookie recipe and it is, I just changed a few thing’s. Enjoy!
