Jalapeno Popper Pizza

Hello Everyone,

I made this pizza for the Superbowl. Ray wouldn’t eat it so I ended up eating the entire pie! Within two days!! 🙂 I did make him a different pizza, I’ll list the ingredient’s below.

Jalapeno Popper Pizza:

Pizza Dough:

1 package active dry yeast

1 tsp. honey

1 cup warm water (110-115) degrees

3 cups all-purpose flour

1 tsp. salt

1 tbsp. olive oil

Dissolve yeast in water, and add remaining ingredient’s expect 1 cup flour and mix until you have a smooth dough. Knead in the rest of the flour. Let rise for 30 minutes. The dough is ready when it will stretch as it is lightly pulled. This dough will make 2, 8-10-inch pizza’s.

For the toppings:

Jalapeno pizza:

Garlic sauce:

4 oz. cream cheese, softened

3 cloves garlic

1-2 tbsp. milk

Blend all 3 ingredient’s together until smooth and creamy.

Pepper jack cheese, shredded

pickled jalapeno slices

Panko bread crumbs

Roll out dough to an 9 inch circle, spread garlic sauce on dough and sprinkle with some cheese. Layer as many jalapeno slices as you like on pizza. Top with more cheese. Then sprinkle with about a cup of Panko bread crumbs. (I used the Panko to add extra crunch to the top of the pizza.) I use a pizza board to make pizza’s on, (sprinkle the board with cornmeal), it will slide better onto the stone, then slide the pizza onto a HOT baking stone. If you don’t have a pizza board or stone you can use a cookie sheet. Crank up your oven to 500 degrees, and it will take the pizza about 10-12 minutes, watch closely so it won’t burn. It will take a little longer on a cookie sheet, about 20 minutes.

 

 

 

I made Ray a BBQ chicken pizza. All I did was use the same dough. Then spread some BBQ sauce on dough, sprinkle with cooked shredded chicken, then sprinkled with extra sharp cheddar cheese. You can add some thinly sliced red onion if you like, I didn’t because I didn’t have any. He loved it!

 

 

 

I know it’s been two weeks since my last post, but Ray and I both have been sick. First he was sick for 3 days with a cold, then I got some kind of flu. I was so sick I ended up in the ER. They tried to get an IV in my arm and they ended up poking me 8 times! They needed to draw blood, and got some from two spots but my veins kept collapsing. I was very dehydrated. They did end up putting an IV up in my shoulder, weird place but it worked.

Crazy Crust Pizza

Hello everyone,

This pizza recipe is a cross between a casserole and a pizza. It has been in our family for years, I have no idea where it came from.

1 cup all-purpose flour

1/2 tsp. salt.

1/2 tsp. italian seasoning

2 large eggs, beaten

2/3 cup whole milk

Mix together all above ingredient’s until smooth.

1lb. ground beef, ground turkey or sausage

1 med. onion chopped

1 bell pepper chopped

1 (8oz package) sliced mushrooms

pizza sauce

1 cup shredded cheese

Brown meat, with the onion, mushrooms and bell pepper.  Lightly grease and flour a 9×13 square baking pan. Pour batter into pan, top with browned meat mixture.  Bake for 15 minutes at 425 degrees. Then top with the cheese and pizza sauce, bake another 15 minutes. This recipe is very easy to make and very tasty! You can use whatever kind of pizza or tomato sauce you like on this.

I’m sorry I haven’t been very good at posting the last couple of weeks, I am off the steroids this week and I’m having a hard time with it. I’ve been sick and have been in some pain. It’s going to take some time for my body to adjust to this. We are hoping that the Sarcoidosis is in remission…

I have 2 cakes to bake this week, one I delivered to the nursing home today. My next one is for a vet and he likes telling jokes, so I’m going to need Ray’s help with this. He can come up with some really good idea’s for cakes. My last one is for the Ronald McDonald House, I’ll have to bake in their kitchen. Ronald McDonald house charity’s changed the law that no prepared food can be brought in, it all has to be cooked or baked in their kitchen. I used to bake for them a lot before they changed the law. This will be my first time baking in their kitchen and I only have 2 hours! They like single serving treats so I might be able to make some cookies, muffins, or a quick bread, we’ll see what happens Friday!

Well I better go for now, I need to make supper.

Deep Dish Pizza and Purple Cake?

Hello everyone, 

My cake delivery today went well. The place I was taking the cake to called me Monday morning and let me know what the lady would like. Well, it wasn’t strawberry cake!!! Her favorite color is purple and she loves cats, so what I decided to do was make a cat shaped cake instead. I put the strawberry cake in the freezer for another time. I’ll take it to the nursing home next week, I have a cake for Friday there. Well back to today, I made a white cake and added purple food coloring to the batter. My mom thought it sounded yucky, but I had to do something!! I would have added some blueberries or blackberries if I had them. I baked the cake after the lady called me and didn’t get it done until 2am. I’m a night owl anyway, and it drives my husband crazy that I stay up so late. The lady the cake was for wasn’t there, she was what they called out in the community. This place is for mentally challenged adults, and I’m sorry to say I’m not all sure what they do there, I just make cakes for them! I can’t believe I made the cake in one day! It normally takes me 2 days, I have carpel tunnel in my hands. That’s part of the reason I only make cakes for charity. My hands will hurt after a while, I can’t squeeze the piping bag if the frosting is to stiff. I have one more cake for this week and it’s at the VA. He likes angel food cake and likes fishing. I decided to make a 7-minute frosting for the cake. I don’t like decorating with whipped cream, it’s just to messy. My husband will be delivering the cake for me, he works next to the Va and always takes them for me. I try to make the cakes easy for him to deliver, he doesn’t like if I make the cake to close to the edge of the cake board. He HATES’s the covering we use to wrap the cakes, he always complains about it. The wind where we live like’s to blow really hard and if we don’t hold the cake and wrapping just right it would blow away!!! I’m not kidding either!!!    

I did see my Dr. yesterday,  I do have shingles and it hurts like crazy!!! She put me on an antibiotic, so hopefully this will clear up soon. She said it could take 2 weeks to 6 months to heal Yikes!!! I’m praying it will heal fast!!!  I’m only 34 years old, but my body thinks it’s 90!!! Most people my age don’t get this, but I have always had wierd thing’s. I’m seeing the hemotaligist Thursday and I’m a bit nervous about what they found out. I’m glad my husband will be there and so will my mom… 

Ok enough for now, here’s a recipe for a deep dish pizza I like to make, the pizza dough is Wolfgang Puck’s recipe I take no credit for it!!! It’s a really good pizza dough!!! Sometime I’ll post my grandmother’s recipe for crazy crust pizza. It taste’s great and is so easy to make!! Enjoy everyone!!! 🙂 

DEEP DISH PIZZA DOUGH: 
1 tblsp. active dry yeast 
1 tsp. sugar 
1-cup warm water (110-115 degrees) 

3 cups all-purpose flour 

1 tsp. salt 

1 tblsp. olive oil 

In small bowl, dissolve the yeast & sugar in ¼ cup of the water. In a medium bowl add remaining ingredients & the yeast mixture. On floured surface knead the dough about 10-15 minutes the dough should be firm & smooth. Cover the dough with a clean damp towel & let rise in a warm spot for 30 minutes. (When ready, the dough will stretch as it is lightly pulled. 

TOPPING: 

1 lb. ground meat, any kind 

4 cups cheddar cheese 

4 cloves garlic, minced 

1 small onion, chopped 

1 (8 oz.) package sliced mushrooms 

1 tblsp. butter 

1 (8oz can) tomato sauce 

½ tsp. red pepper flakes 

1 tsp. salt 

2 tsp. dried Italian seasoning 

In a large skillet cook the meat, onion, & garlic until meat is browned & onion & garlic is tender; set aside. 

Place mushrooms & butter in a microwavable bowl, & cook until soft; set aside. 

In a separate bowl, mix the tomato sauce, red pepper flakes, salt, pepper, & Italian seasoning; set aside. 

Stretch & pull dough to fit a 12-½ inches in diameter deep-dish pizza pan, or a 9×13 square pan. Top dough with 1-cup cheese then with prepared sauce, then the meat mixture, mushrooms, & remaining cheese. Bake at 350 until lightly browned & cheese is bubbling. About 40-45 minutes.

Easy Greek Style Pizza and Chili made today!

Hello all,

I made the 2 chilies tonight, Aaron McCargo Jr. was easy to make. The only trouble I had was that I couldn’t find bonless beef short ribs. I ended up buying 3lbs. of bone in beef short ribs it’s all I could find. The other problem I had was with all the oil. I ended up skimming alot of oil off the top, could have been the short ribs maybe? I followed the recipe with everything else. It tasted really good, I had a 1/2 cup full just to test the flavor. We’ll see how everyone likes it tomarrow… Melissa d,Arabian’s chili took alot more work, I still have to add the spinanch and the cream tomarrow before we eat it. I think that will tame the heat a bit, it’s a little hot. I coudn’t find smoked paprika, so I bought some mexican paprika, it’s a little hotter than the regular kind. Both these recipes were a little spendy, I spent about $50 for everything. The recipes say they should feed 6-8 people, so I guess that’s not to bad. Cheaper than going out to eat somewhere!!! I didn’t finish the cake for tomarrow, I don’t think anyone will miss it, anyway. Were decorating cookies so there will be plenty of other stuff anyway. I am just to tired tonight!!!  I have the cake baked and the icing made, I put them in the freezer to use for something else maybe…

I baked the cake for the vet today, decided to make a spice cake with a cream brulee flavored icing. I’m using coffee creamer in the buttercream, I think it will taste really good we’ll see!!! 🙂

I saw my 2 Drs. today and the dentist said I’m doing a really good job taking care of my teeth. He gave me some tips on how to handle my teeth sensitivity and dry mouth. To to stay away from acid like foods, and don’t use teeth whitening. The eye Dr. said my eyes are doing better, which is good. I’ll see hime agian in 2 months for check up, I jsut keep praying that they will get better.

I got a letter from the Caynon County Fair today to renew my contract for this year. Last year the fair decided to have a tent and put my department, the canning department, horticulture department, and the chefs of the day out there. It was distarous, my display cake was made of fondant and by the next day it was melting, so were other cakes. My judges couldn’t even taste some enttries because with the heat and the swap coolers they had in there. Anything that was made with fruit was allreay starting to mold!!! YUCK!! You could smell it when you opened the ziplock bag. I know they thought is was a good idea, and I wished it could have worked out. The tent cut off alot of handicapped and senior parking, I don’t think we had as many people come last year. We’ll see how this year turns out. I’m not sending the letter back until next week, after I see Dr. Oster, the specialist. I have 2 more lung treatments, and we’ll see from there what they can do.

Here’s my recipe for me Easy Greek Style Pizza, I hope you all like it!!! Tomarrow I’ll post pictures of my display, how it looked before and after… 

Easy Greek Style Pizza

1 (13.8oz.) tube pizza dough

1/2 cup ranch salad dressing

2 cups crumbled feta cheese, divided

2 cups cooked & shredded chicken

1 (13.75 oz.) can quartered artichoke hearts, in brine,

                                                    rinsed, drained, & patted dry

1/2 cup oil packed sun dried tomatoes, chopped

1/2 cup calamata olives, sliced

Preheat oven to 350 degrees. Lightly spray a 12-inch pizza pan or a 9×13 pan with cooking spray, & spread out the pizza dough evenly. Pre-bake the dough for 15 minutes. Spread on the ranch dressing & one cup of the feta cheese. Layer on the rest of the ingredients, and top with remaining feta cheese. Bake for 25-40 minutes, or just until the pizza crust I browned on the bottom and the cheese is melted.
