Mexican Cookbook

Hello everyone,

I wanted to let you all know about a great Mexican cookbook that we picked up many years ago when we lived in Mesa, AZ. It’s called (Mexican family favorites Cook Book, by Maria Teresa Bermudez.) It has some of the best recipes I have ever tried for mexican cooking.  I made some turkey enchilada’s last night and they turned out great. The recipe say’s to lightly fry your corn tortilla’s in oil, but I don’t do this. I just dip the tortilla in the warm enchilada sauce, and it works great! I stopped buying enchilada sauce after I made some from this cookbook, the canned kind just doesn’t taste the same, plus this is so easy to make! There are several very tasty dessert’s in there to. Get this book you won’t be sorry!! I found it on Amazon for ya!!!

I’m working on my cake for the mentally challenge adult tonight, I baked the cake last night. It’s chocolate cake with chocolate frosting.  The young lady likes horses, so I decided to go with that theme.

I saw my eye Dr. today and my eyes are slowly getting better, which was great to hear or see lol!!! My leg is doing better, it’s not swelling or red like it has been. Guess what my last Dr. appt with Dr. appt with my MD. went really well, I don’t have to test my blood sugar anymore! I also lost 4 pounds since the last time I was there!!! yaaaa!! I do have a bladder infection and a yeast infection that I’m still fighting, but other than that thing’s have been getting a little better with my health…
